I created this easy-to-make showstopper cake a few years ago, and it’s remained a favorite ever since. It’s perfect for bakers of all experience levels, and the best part is that you can personalize it with a special message just for Mom!

In this tutorial, you’ll learn how to:

  • Level cake layers
  • Cut cake into sections to make the letters
  • Tort the cake
  • Cut the letters
  • Arrange the letters and piping
  • Add toppings

Let’s get started:

Step 1: Leveling cake layers

First, I baked a vanilla cake in a 9×13 inch pan.

Once the cake cooled, I leveled the top with a serrated knife, using it in a sawing motion to remove the caramelization.

Step 2: Cutting the cake into sections to make letters

After the top of the cake was leveled, I placed my template on top and cut out sections for each letter.

I used my cake leveler to cut the cake in half horizontally to make layers.    

There are notches on the legs of the leveler that adjust the height of the wire.

Make a sawing motion through the cake while slowly rotating the cake with your other hand.

You can also use a serrated knife, but I prefer the leveler since it helps me keep my hand straight.

Step 4: Cutting the letters

Now it is time to use the template to cut the letters into their shape. 

Place the template on top of the cake and carefully cut around the template.

I switched to a smaller knife to make it easier to get into the smaller spaces.

Step 5: Arranging the letters on the cake board and piping (shown in 1-4)

  1. Arrange the letters on the cake board, and then add some buttercream underneath to help them stick to the board. Next, prepare your piping bag with buttercream. I used piping tip 1A, which is a round tip. 

2. Start by piping rows on the bottom layer of the cake with buttercream.

3. Then, carefully, add the top layer of each letter, lining it up with the bottom layer.

4. Again, pipe the buttercream on the top layer just like you did the bottom layer.

Step 6: Add toppings

Now it’s time to place the toppings on the cake.

The toppings I have are strawberries, raspberries, kiwi, candy hearts, and candy pearls.

You can choose the toppings you like. 

Place the toppings carefully on the cake, pushing them into the buttercream a little bit, so they stay put.
